Sometimes I feel rebellious, and crave foods that are not on my surgeon's APPROVAL list! That's when I pull out a few surprises and re-create something that LOOKS unhealthy, but actually it's "good for me"! By the time I got home from work, I felt REBELLIOUS and wanted to eat something bad! Don't know what got hold of me... I think it could be hormones cause that makes me crave ravioli, fries, etc. Tonight both sounded pretty good and after searching the freezer, I had an idea. I would just make a low carb pizza. And maybe add a few meatballs. No, I would eat the meatballs on top of some ricotta cheese topped with pizza sauce. By the time I was done with my supper, I had this! I call it a low carb stromboli.

Oh my goodness! It was sooo wonderful! I could not eat 1/3 of this thing either! I left the remaining 2/3 on the stove and when my nephew came in, he ate all of it... so it must have been good for him to eat my "diet food" as he calls it! Here is what I threw together:
- 1 Joseph's Lavash flat bread (low carb, high in fiber)
- Pizza or other low sugar marinara, spaghetti sauce
- All your favorite toppings! (I used: small pieces of meatballs, ricotta cheese, jalapenos, sliced sundried tomatos, skim mozarella shredded cheese, spices)
Broil Lavash on both sides in oven; spread on the sauce and add toppings, broil longer until cheese melted. Take from oven, roll together, stick back in oven to get it a little brown on top. Remove, cut & serve. Yes its a little messy! But oh so good! Oh so good! Now who says we cannot enjoy our food?!? If you wanted pizza, you could just keep it unrolled, OR use a round low carb pita or tortilla. Here's what it looked like before I rolled it up. I figured it would be much easier to eat, and tastes the same! OH! and I also want to add... ever since I started taking pictures with a REAL camera... my cooking sure has improved! Or should I say, the pictures of my cooking have improved! Coincidence? Maybe my cooking was good all along, the pictures were just awful.Yeah, that's what I am going to say to Tim the next time he hates my recipe... "Oh yeah, well you just look at this picture first, then taste the food."
